Ingredients
  

  • 1 lbs potatoes
  • 1 tbsp oil
  • ½ tsp ancho chili powder
  • ½ tsp salt

  • 2-4 squashes sliced into half moons
  • 2 tsp oil
  • salt and pepper to taste

other ingredients

  • 1 Seasoned black beans (recipe below)
  • 6 cups cooked rice
  • 2 Avocado cubed
  • 1 Cilantro for garnish
  • Minced jalapeño, for garnish (optional)
  • alsa
  • Lime wedges

Instructions
 

  • Preheat the oven to 400°F (for roasting) or heat a skillet (for sautéing) over medium heat.
  • Toss cubed sweet potatoes with olive oil, chili powder, and salt, then roast or sauté until tender and lightly crisp.
  • In another pan, sauté zucchini with oil until tender, about 5 minutes.
  • Warm black beans in a pan, seasoning with garlic powder, cumin, and lime juice.
  • Assemble the bowl: Start with rice, then add roasted sweet potatoes, black beans, zucchini, avocado, and cilantro.
  • Top with optional jalapeños, hot sauce, and a squeeze of lime.
    A delicious plate of Avocado Hash Browns paired with Scrambled Eggs, ideal for a healthy breakfast.

Notes

This recipe is easily customizable with toppings such as radishes, sunflower seeds, or a tahini drizzle.
