For the Pizza

  • 2 balls pizza dough, homemade or store-bought, at room temperature
  • All-purpose flour, for dusting the countertop
  • Cornmeal, to dust the peel or baking sheet
  • ¾ cup garlic-dill sauce, divided
  • 2 cups jarred dill pickle slices, patted dry, divided
  • 2 cups shredded whole-milk low-moisture mozzarella cheese, divided
  • ½ cup finely grated Parmesan cheese, divided
  • 1 teaspoon dried dill, divided

Instructions
 

  • Prepare the Dough: Start with your preferred pizza dough. You can use store-bought dough for convenience or make your own from scratch. Roll it out on a floured surface to your desired thickness, ensuring an even layer for an optimal crust.
  • Layer the Sauce and Cheese: Spread a light layer of your preferred pizza sauce over the dough. If you want to experiment, try a mustard-based sauce for an extra tangy twist. Next, layer the cheese, start with mozzarella for a gooey foundation and add any other cheese varieties you prefer for added flavor.
  • Add the Pickles and Toppings: Layer your pickles over the cheese, making sure they’re evenly spaced so each slice gets a perfect bite. Add any additional toppings such as bacon, onions, or olives. Be mindful not to overcrowd the pizza, as the pickles should remain the focal point.
  • Bake the Pizza: Preheat your oven to 475°F (245°C). Bake the pizza on a pizza stone or baking sheet for 10-12 minutes, or until the crust is golden and the cheese is bubbling. For extra crispness, place the pizza on the lowest rack in the oven.
  • Finishing Touches: Once baked, remove the pizza from the oven and add fresh herbs or a drizzle of mustard if desired. Let Allow the pizza to rest for a few minutes before slicing and serving.

For a crispier crust, place your pizza stone or baking sheet in the oven while it preheats. This ensures the dough cooks immediately when placed, helping to achieve a golden, crispy bottom.
