- 2 medium tomatoes diced
- 4 scallions (green onions), chopped
- 1 medium cucumber peeled and diced
- 2 hard-boiled eggs chopped
- ½ cup cheddar cheese grated
- ½ cup ham diced (optional)
- 1 salt and pepper to taste
- 2 tablespoons Olive oil
- 1 tablespoon Apple cider vinegar or lemon juice (for the dressing)
In a large bowl, combine the lettuce, tomatoes, scallions, cucumber, hard-boiled eggs, and ham (if using).
Sprinkle the grated cheddar cheese over the top.
