How to Make a Hearty Hawaiian Beef Stew Recipe

Ingredients
  

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium potatoes peeled and cubed
  • 2 medium carrots sliced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup pineapple chunks (fresh or canned)
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 1 cup water
  • 3 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp ground ginger
  • 1 tsp ground thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tbsp vegetable oil (for searing)

Instructions
 

  • Sear the Beef: In a large pot, heat vegetable oil over medium-high heat. Add beef cubes in batches and sear until browned on all sides. Remove and set aside.
  • Sauté Aromatics: In the same pot, add chopped onion and garlic. Cook for 2-3 minutes until fragrant and softened.
  • Add Tomato Paste and Spices: Stir in tomato paste, ground ginger, thyme, and a pinch of salt and pepper. Cook for another 2 minutes.
  • Deglaze: Add soy sauce, Worcestershire sauce, and beef broth. Scrape up any browned bits from the bottom of the pot.
  • Simmer the Stew: Return the beef to the pot, add water, bay leaf, and bring to a simmer. Reduce heat to low, cover, and cook for 1.5 hours or until the beef is tender.
  • Add Vegetables: Add potatoes, carrots, and pineapple. Simmer for another 30 minutes or until the vegetables are tender and the stew has thickened slightly.
  • Adjust Seasoning: Taste and adjust seasoning with additional salt, pepper, or soy sauce if desired.
  • Serve: Discard the bay leaf. Serve the stew hot, garnished with fresh herbs, and with steamed rice.

Notes

  • For a richer flavor, substitute beef broth with bone broth.
  • If you prefer a thicker stew, you can mash some of the potatoes in the stew or add a cornstarch slurry.
  • Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
