  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup parsley, chopped

  • 1 tbsp lemon juice
  • Salt and pepper (to taste)

Instructions
 

  • Rinse the quinoa under cold water and cook according to package instructions, about 15 minutes.
  • While quinoa cooks, chop the vegetables and set them aside.
  • Once quinoa is cooked and cooled slightly, transfer to a large bowl.
  • Toss quinoa with tomatoes, cucumber, parsley, lemon zest, olive oil, and lemon juice.
  • Season with salt and pepper to taste, and serve chilled or at room temperature.
